Hi Fit Readers,
We made a delicious and fairly easy meal the other night. Fit Baby loved it for leftovers the next night too!
Ingredients:
2-4 boneless skinless chicken breasts
Feta cheese crumbles
1/2 bag Baby organic spinach leaves (The more the better because it shrinks down)
1 egg beaten
1 cup bread crumbs or Shake n Bake Mix
Preheat oven to 375. Clean chicken breasts and trim fat. Butterfly the chicken. Sautée or wilt spinach. Stuff chicken with feta cheese and spinach. Place the chicken breasts in the beaten egg and then roll in the bread crumbs. Spray baking dish with non stick spray and place chicken breasts in the dish. Bake for 35-40 minutes or until done.
Enjoy! Serving option: green veggie and brown rice.
It turned out fabulous...I cannot take all the credit.....my chef husband was right by my side! Everything tastes better when he cooks!
Watching your carbs? You don't have to do the bread crumbs. They just add a little something extra😃
