It's cold out there! Are you going stir crazy staying indoors? We occupied our time on Tuesday afternoon by making a warm chicken tortilla soup.
2-3 boneless skinless chicken breasts
1 onion chopped
1 jalepeno chopped
1 tbsp olive oil
2 poblano peppers chopped
8 cups chicken broth (I like low sodium)
1 can stewed tomatoes
1 can tomato soup
1 can cream of chicken soup (I like 98% fat free)
1 can corn
Salt and Pepper to taste
1 tbsp chili powder
Boil the chicken breasts. Sauté onion and peppers in olive oil. Shred chicken (easiest in the food processor). Put all soups, broths, veggies, chicken and seasonings in a stock pot. Put on low to medium heat for 1-2 hours. EASY! And so good! Serve with tortilla chips, a dollop of sour cream, some shredded cheese and fresh cilantro. (Just suggestions....top with whatever you like).
So, whatcha wait'n for? Cook it up and do some squats while you stir the pot 😜
