Yep, it's Fall Y'all! And the weather is kinda starting to show it! If you're like me, you've got your pumpkins and fall decor on your front porch, costumes have been purchased for the kids, and you've already visited a few pumpkin patches! I love this time of year and the cooking that goes with it!
Here's a healthy recipe that's a favorite in my home:
Spaghetti Squash Chicken Pesto:
Ingredients:
1 spaghetti squash
2-3 chicken breasts
1 jar artichoke hearts
1 can black olives
1 jar pesto (or make your own)
Feta cheese
Directions:
Preheat oven 400 degrees. Cut squash in half and poke holes in the bottom. Face down in a baking dish with 1/2 cup water. Bake 45 minutes or until done. While baking your squash, cook chicken in a pan with coconut oil, salt, pepper, and your other favorite spices. Let cool and cut into small pieces. Let squash cool and spoon all spaghetti out....get your kids to help....it's like getting the guts out of the pumpkin 🎃 Place into a baking dish; add chicken, artichoke hearts, olives, pesto, and mix all ingredients well. Sprinkle feta on top of your casserole and bake on 350 degrees for 25 minutes. Vola!
Serve with a green salad and enjoy!
