Hi Fit Foodies!
I have a great chicken salad recipe inspired by the fabulous chicken salad at My Fit Foods. I hope you give it a try and enjoy this healthy recipe:
3-4 chicken skinless boneless chicken breasts
1 cup fat free plain Greek yogurt
1 cup fat free mayonnaise
1 celery stalk diced
1/4 cup dried cranberries
1/4 cup chopped pecans
3-4 chopped tarragon leaves
Salt, garlic salt, and pepper to taste
2 tbs lime juice
Boil the chicken. Let it cool and shred. Mix all ingredients together. Chill in the fridge before serving for 3-4 hours.
Enjoy over a fresh bed of spinach, with whole grain crackers, or in a spinach tortilla wrap.
