Hi Fit Foodie Fans,
Well I cannot believe another month has passed and I am so slow to get these blog posts together. Must mean my year is off to a busy start! Yes, it is....my fit baby (now a toddler) is THREE and my fit baby girl is now 8 months! Time is flying and we are definitely having fun! So who's to say you can't have fun while eating clean and green!?
March! It's the green month, right? St. Patrick's Day is right around the corner! We hope the sun will be out more and more making greener grass and greener trees, and with bathing suit season and spring break this month, we need to be eating clean and green too! What are your favorite veggies? Favorite veggie recipes?
Some of my favorites are broccoli, green beans, asparagus, and edamame. I love broccoli raw with hummus or roasted in the oven; lightly tossed in olive oil and sprinkled with seasonings. Green beans are a favorite sautéed or steamed and I like adding a little chopped onion and mushroom to the mix. Asparagus is great roasted and thrown on broil for just a minute to get it a little crispy. And I buy the steamer bags of edamame served with a little low sodium soy sauce. These greens help me live a healthier life by eating 2-3 servings per day.
My neighbor gave us the idea of roasting veggies, and it has been very simple:
Preheat oven to 400
Clean and cut veggies
Place veggies in a baking dish and sprinkle olive oil and your favorite seasonings. Bake for 30 minutes.
