I am starting a series on my blog called "cheap tricks for moms". I started thinking of ways I could get fit baby to eat more veggies, and it occurred to me that if it's "hidden", maybe he won't notice!
Halloween is right around the corner and I wanted to make something special for fit baby's class at school. As I was trying to think of something to make, I decided I wanted to throw some greens into whatever I make. So, I looked through some of my recipes and found one that I like! It's called Moose Munch....a friend of mine gave me this recipe at my recipe shower before my wedding. Well, it's not healthy, but it is delish and I found a way to add spinach WITHOUT anyone knowing!!
Here is the recipe (and the way I added spinach):
2 sticks butter (I used margarine)
1/2 cup brown sugar (I used light)
2 sleeves club crackers (I used reduced fat)
1 package simi-sweet chocolate chips
2 BIG handfuls of raw spinach
Orange sprinkles (for Halloween)
Line a cookie sheet with foil and spray with olive oil. Line the crackers across the tray. Melt butter and sugar together. Throw spinach in a food processer until it is chopped finely. Pour the butter and sugar mixture over the crackers. Then take your chopped spinach and "make it rain". That's right, sprinkle it over the butter mixture. Now bake at 350 for 5 minutes. Then put the chocolate chips on top and bake 1-2 minutes until soft. Spread the chocolate evenly over the crackers. Let sit 10 minutes and then put it in the freezer. Once frozen get your kids to help you put sprinkles on top. Voila!
