Hey Fit Foodies!
Yes, today, I am going to give you a fantastic cupcake recipe! Nope, not the kind with sugar and icing....the kind with ground turkey, veggies and oats that you bake in a cupcake pan. Ok, so that's not totally exciting like a sugary cupcake, but what if I told you that it's fun for the whole family AND Fit Baby likes these!? Sounds a little better....right? Anyway, these delish low carb, low fat, and high protein turkey cupcakes are amazing. You can put whatever ingredients (veggies) you like in there, and they are "hidden" so your kiddo doesn't know the difference. There is a lot of chopping that goes into this recipe, but the fresher the ingredients the tastier. We took a family trip to Trader Joes and got some excellent produce for this batch of turkey cupcakes. Make sure you involve the kiddos in helping out with the different ingredients in the bowl, mashing it up, and rolling the ingredients into balls. Fun for everyone! So, here is the recipe we like....again, you can add a little or lose a little depending on what you like:
2 lbs lean ground turkey (we like Jennie-O)
2 egg white as
1.5 cup oats
2tbsp worcesestershire
3tbsp cumin
1 tbsp garlic powder
1 onion chopped
1/4 cup chopped green onion
1 red bell pepper chopped
1 can diced green chiles
Salt and pepper to taste
Chop all veggies and put into a large mixing bowl. Add ground turkey, egg whites, oats, and seasonings. Mix all together (with your hands and help from kiddos). Ball mixture and put into a greased cupcake pan. Bake at 375 for 30-45 minutes. Delish!
Serve with baked squash and zucchini or your vegetable of choice.
