Hi Fit Foodies!
Last night I made some amazing stuffed bell peppers! Below is the recipe!
Ingredients:
2-4 green bell peppers
1lb ground turkey
1/2 white onion chopped
1 cup rice (I like brown)
1 can diced tomatoes and green chilies
1/4 cup ketchup
2-3 tbs Tabasco
Salt and pepper
Italian seasoning
Oregano
Fennel
Cut the tops off peppers and clean out the insides. Boil in water to make soft for 3-5 minutes. Chop onion and sauté. Add ground turkey and tomatoes. Sauté until done and add in seasonings. Cook 1 cup rice and add to the meat mixture. Place peppers in a baking dish with 1/3 cup water on the bottom of the dish. Put a little olive oil in each pepper. Stuff peppers with meat/rice mixture. Mix ketchup and Tabasco together and spoon on top of stuffed peppers. Bake 375 for 35 minutes or until done!
Enjoy with a side spinach salad.
