Hey Fit Foodies,
This fit mom and family have been on the go weekend after weekend visiting friends, family, and enjoying the last weekends of summer at the beach. We finally had a weekend at home two weekends ago, and when I woke up on Saturday morning, I thought, I'm going to make breakfast in my OWN kitchen! As I looked through the pantry, I saw Aunt Jamima's pancake/waffle mix and decided that waffles it was! I started mixing the waffle mix, the eggs, the milk and oil then saw a bag of flax out of the corner of my eye....why not?! So I added two table spoons of flax. I mixed it up and then noticed a browning banana in my fruit basket. Again, I thought...why not! So I mashed it up and threw it in the mix!
Here is the mix:
1 cup waffle mix
1/2 cup milk
2 tbsp oil
2 eggs
2tbsp ground flax seed
1 banana
Mix all ingredients together and cook in your waffle iron. I then added some sliced bananas on top and served with a little maple syrup.
This delicious breakfast went from being your average waffle to one with a little more fruitful flavor and fiber!
