Hey Fit Readers!
I hope you had a fun weekend! On Friday, I had a chance to get out, do some shopping, and enjoy a nice lunch while Fit Baby was still at school. Sometimes it's nice to do things by yourself.....especially lunching and catching up on the social media world. I went to a local place called Hungrys and had a very unique and tasty salad. It was grilled shrimp and quinoa over a bed of lettuce. Delish! Wow, that combo never really crossed my mind, but it was fabulous. A great source of proteins, fibers, and carbohydrates all in one salad. Today is my grocery store day, and I think I will be buying these ingredients to make my own mouth watering salad!
Here is the recipe I am going to try:
Ingredients:
6 shrimp
1/2 cup quinoa
Baby spinach
Cucumbers
Tomatoes
Black olives
Balsamic vinagarette
Directions:
Grill the shrimp, boil the quinoa, put it all on top of some spinach with tomatoes, olives and a little vinagarette! Easy!
